Hakuba Opens at Cheval Blanc Paris

Elevating its culinary offerings to a new level of luxury, Cheval Blanc Paris has recently announced the opening of Japanese fine dining restaurant, Hakuba.

Marking the hotel’s fifth dining concept (in addition to three-Michelin-starred Plénitude, Le Tout-Paris and Langosteria), Hakuba is the result of a unique collaboration between Cheval Blanc Paris’s head chef Arnaud Donckele, revered Japanese sushi chef Takuya Watanabe and the hotel’s pastry chef Maxime Frédéric.

Intended to be a gastronomic immersion into the rituals and traditions of Japanese cuisine that have so captivated the Western fine dining landscape in recent years, Hakuba offers refined omakase-style cuisine in the heart of Paris.

"We want this table to be a total immersion into Japanese art and craftsmanship,” says Donckele. “On the sushi, temaki, gunkan side... Takuya Watanabe embodies rigor and authenticity. He has full creative freedom for remarkable creations with products such as fish, rice, Iio Jozo brewery vinegar, and seaweed."

It’s been two centuries since Alexander Reid, founder of The Macallan, distilled the very first batch of whisky on the banks of the River Spey in Scotland. Since then, the iconic brand has cemented its reputation for producing some of the highest quality single malts in the world. Now, to celebrate its 200th birthday, the storied distillery has joined forces with Bentley Motors to finally release a collaborative single malt Scotch: The Macallan Horizon.

As you would expect, this is no ordinary whisky. Effortlessly fusing The Macallan’s traditional craftsmanship with Bentley’s cutting-edge engineering technology, the resulting liquor is truly special. The distillery’s master whisky maker, Kirsteen Campbell, painstakingly selected six first-fill sherry-seasoned oak casks from the stocks at the estate to craft the single malt. Each of the casks brings its own characteristics to The Macallan Horizon, imbuing the whisky with a complex and intense flavor, texture and natural color.

What does it taste like? According to the distillery, you can expect rich flavors of dried fruit and spice, expertly balanced with notes of oak and leather in a nod to the aromas found in Bentley’s luxury cars.

The Macallan Horizon is presented in a horizontal glass bottle featuring a unique 180-degree twist detail. In homage to the key materials used to manufacture Bentley’s vehicles, the glass is encased within an aluminum ribbon and chestnut-hued sculpture lined with the finest low carbon leather. When London has seen its fair share of exciting openings this year – from Raffles London at The OWO and The Peninsula to 1 Hotel Mayfair – you might think it would be hard to get excited at the sound of a new launch, and then you would be mistaken. As the city eagerly awaits for the doors to open at The Emory – the sixth property from The Maybourne Group, better known as the operators of Claridge’s, The Connaught and The Berkeley – it has just been announced that the Knightsbridge hotel will house a new restaurant from three-Michelin-starred chef Jean-Georges Vongerichten. 

Slated to open on April 4, abc kitchens will be Vongerichten’s first location in the UK and will also mark the first time that his celebrated trilogy of New York restaurants –  abc kitchen, abcV and abc cocina – sit under one roof. 

Though the three standalone restaurants showcase different culinary offerings, farm-to-table fare, plant-based, and Latin-inspired, respectively, abc kitchens will seek to unify them through one biding philosophy: a passionate commitment to fresh, organic, sustainable, and ethically sourced local produce.

Chase the Solar Eclipse at 30,000 ft with JSX

Umbraphiles, listen up. Those who just had to Google the definition (it means solar eclipse chaser, by the way), may consider themselves one when they hear what JSX is offering. The premium regional air carrier is running a sweepstake to offer 12 lucky shadow chasers front-row seats on a specialty flight to track the North American total solar eclipse. 

Flight 4824 will depart on April 8, 2024 from Dallas from JSX’s dedicated hangar at Dallas-Love Field – Texas is set to be the prime location for totality. The flight will last for two hours, flying the path of totality during its peak shadow casting, before returning back to Dallas.

Those lucky enough to get a seat on board will not only get to experience this once-in-a-lifetime event from 30,000 ft but will also be led by former NASA astronaut and JSX pilot Bill Gregory, who will navigate the solar eclipse with his expert commentary.
